Potato Latkes
These are some excellent traditional potato latkes. They are really simple to make, but frying them can take a while.
Servings: 22 latkes feeds about 5-6 people
Preparation Time: 15-20 min depending on how fast you peel and grate potatoes

Chop the onion and peel the potatoes.
Grate the potatoes. This can be done easily with a food processor.
Place the grated potatoes in a bowl with cold water. Let them soak for about 5 min. (This is a good time to do some dishes). Strain the grated potatoes well, use a towel if necessary.
Beat the eggs lightly with a fork.
In a large bowl mix the onion, potatoes, eggs, salt and pepper.
Heat some oil in a frying pan or griddle. Spoon out fairly thin 4-inch diameter potato latkes. Press them flat with a fork. Cook on each side for about 5-7 minutes until they turn golden brown. Add oil in between batches as necessary.
