Strawberry Pie
This strawberry pie filling tastes great. It was a bit of an experiment, and unfortunately it didn't work out so well. The filling turned out very runny. It would have worked much better as a strawberry crumble than a pie.

Wash the strawberries and remove their tops.
Place 2.5 cups of strawberries into a food processor and blend for about a minute until it is pureed.
Strain the puree into a sauce pan. Add the sugar and cornstarch. Heat on the stove at medium, stirring constantly until the mixture boils and thickens to the consistency of pudding.
Remove the sauce pan from the stove and add the juice from the lemon.
Cut the remaining strawberries into smaller pieces. Place them in an uncooked pie crust, then cover with the strawberry puree.
Bake the pie in the oven at 375 F for 50-60 minutes.
Notes:
