A light cookie with a sharp lemon flavour. They look beautiful!
Servings: 4 dozen
Ingredients:
Directions:
Sift together flour, baking soda, and salt.
In an electric mixer, mix softened butter until creamy. Mix in sugar until fluffy. Mix in egg and 1/2 teaspoon vanilla. Mix in flour mixture alternating with the buttermilk.
Preheat the oven to 350 degrees F.
Spoon tablespoon size amount of dough onto a cookie sheet. Don't be afraid to make them small, they grow and flatten out when they bake.
Bake cookies for 10-15 minutes, until the bottoms are a golden brown. Let cool completely.
Whisk icing sugar, honey, lemon juice, 1/4 teaspoon vanilla, melted butter, and up to 1 tablespoon of water or more if needed. Transfer half the icing into another bowl. Sitr in cocoa powder, adding more water if needed.
Spread the white icing on half of each cookie's flat side, and the chocolate icing on the other half. Let stand until set, about 30 min.
