Lentil and Barley Soup

A hearty soup that will warm you up in the winter.

Servings: 6-8

Ingredients:

1 teaspoonbasil
1 bay leaf
500 millilitrecanned diced tomatoes
4 largecarrot
4 stalkscelery
6 cupchicken broth
1 teaspoonchopped parsley
1 clovegarlic, minced
1 poundground beef
1 largeonion
0.5 cuppearl barley
0.5 teaspoonpepper
1 pinchthyme
1 cupyellow or green lentils

Directions:

Step 1
Brown the beef in a frying pan with chopped onion and garlic
Step 2
In a large soup pot, add lentils, barley, chopped carrots, sliced celery, and chicken broth. Simmer for 30 minutes.
Step 3
Add the remaining ingredients to the soup pot, including the browned beef. Simmer for another 1.5 hours. You can add salt to your liking.
