Mint Mocha Cookies
These cookies are very chewy and chocolatey like chocolate crackles, but have the addition of mint and mocha flavoring too. The chocolate and candy cane are an optional addition that make them festive for the holidays.

In a standing mixer beat the butter until smooth and creamy.
Add the white sugar and brown sugar and beat on medium high until fluffy and light.
Beat in egg, vanilla, peppermint, and espresso on high speed.
In a mixing bowl, whisk together flour, cocoa powder, and baking soda.
With the mixer on low, slowly mix the dry ingredients into the wet until well combined.
Add the chocolate chips and beat on high until fully mixed. The dough will become very thick.
Cover the bowl and place in the fridge for 3 hours or overnight.
Remove the dough from the fridge and let sit at room temperature for 20-30 minutes.
Roll the dough into 1 inch balls. Bake on parchment paper lined pans at 350F for 10-12 minutes.
Once completely cooled, you can optionally dip into melted white chocolate and sprinkle with crushed candy canes for decoration.
