Apricot, pork, and onion

Category: Amy > Dinner

This is a fairly sweet dish. The apricots have a lot of flavor after being cooked in a frying pan and they go really well with the pork.

4 apricots
0.5 teaspoonblack pepper
1 teaspoonmaple syrup
2 onions
2 largepork chops

Directions:

Slice up the apricots, onions, and pork. Put them all in a frying pan and mix until everything is cooked and the apricots have started to disintegrate. This takes about 20 minutes. When everything is cooked and looking done, add the pepper and maple syrup and cook for another 5-10 minutes. The maple syrup will coat everything and turn a nice dark brown color.
