Carrot & Spinach Muffins

These muffins are the easiest way to get my toddler to eat vegetables. They are delicious for adults too. A savory fluffy muffin.Servings: 24 mini muffins

mix together all the dry ingredients
Grate the carrots in a food processor. Mash the spinach through as well so it's chopped up finely.
Beat the eggs with a fork and add the oil.
Mix the egg mixture into the dry mixture.
Fold in the grated carrots, spinach, and raisins if using.
Pour into oiled mini-muffin tin
Bake for 20-25 minutes at 350F.
