Directions:Step 1 mix together all the dry ingredients
Step 2 Grate the carrots in a food processor. Mash the spinach through as well so it's chopped up finely.
Step 3 Beat the eggs with a fork and add the oil.
Step 4 Mix the egg mixture into the dry mixture.
Step 5 Fold in the grated carrots, spinach, and raisins if using.
Step 6 Pour into oiled mini-muffin tin
Step 7 Bake for 20-25 minutes at 350F.
