Chocolate Chip Banana Bread

An excellent Banana bread that is really more like a light cake with all the chocolate chips. It is full of banana flavour. This version of the recipe has less fat than the original grandmother recipe as it replaces shortening with yogurt and oil.

1 teaspoonbaking soda
0.5 cupbuttermilk
0.5 cupchocolate chips
2 eggs
1.5 cupflour
1 cupmashed banana (2 large)
0.25 cupoil
0.125 teaspoonsalt
1 cupsugar
1 teaspoonvanilla extract
0.25 cupyogurt


Directions:

Step 1
Sift flour, baking soda, and salt.
Step 2
Cream oil, yogurt, and sugar together.
Step 3
Add eggs 1 at a time. Blend well.
Step 4
Mix in mashed banana and vanilla.
Step 5
Add dry ingredients alternately with buttermilk. Add chocolate chips.
Step 6
Pour into a greased 9x9 inch pan.
Step 7
Bake 45-50 minutes at 350 degrees F until dark brown. Use a cake thermometer to check if it's done, as a knife will usually not come out clean, but covered in banana mush.
 

Variations:

Without buttermilk - Add variation to grocery list

Incase you don't have buttermilk lying around you can use this variation.

Add:

0.5 tablespoonlemon juice

Directions:

Mix the milk and lemon juice together to make a replacement for buttermilk.
