Hamantashen

These festive purim cookies are soft and delicious. They can be made with many other fillings as well, but the crushed walnuts are my favorite.

5 ouncecrushed walnuts
3 egg yolks
1 cupflour
2 tablespoonhoney
0.33333 cupoil
1 teaspoonorange zest
1.3 cupsugar
0.5 teaspoonvanilla
1 whole egg


Directions:

Step 1
Mix the eggs, sugar, oil, and vanilla, and half the orange zest together in a bowl until the sugar is all melted.
Step 2
Add about half the flour and mix adding more flour just until the dough is soft and not too sticky.
Step 3
Place the dough in the fridge for one hour.
Step 4
Mix the crushed walnuts with the remaining orange zest and enough honey to make it stick and rollable.
Step 5
Use the remaining flour to flour a flat surface. Use a rolling pin to roll the dough about 1/2 cm thick. Cut circles from the dough and place a rolled ball of the walnut mixture in each circle. Fold over and pinch the corners of the dough, creating a triangle shaped cookie.
Step 6
Bake in the oven at 350F until the cookies are golden brown (about 12-15 minutes).
