0.25 teaspoonallspice
2 teaspoonbaking powder
0.25 teaspoonbaking soda
0.75 cupbrown sugar
0.5 teaspooncinnamon
1 egg
1 cupflour
0.25 teaspoonground cloves
0.25 teaspoonground ginger
1 cupmashed pumpkin
0.5 cupmilk
0.33333 cupoil
1 pinchsalt
0.5 cupwhole wheat flour


Directions:

Step 1
Combine dry ingredients and spices in a bowl.
Step 2
In a large bowl, beat pumpkin, milk, oil, and egg.
Step 3
Add dry ingredients to liquids and mix.
Step 4
Spoon into prepared muffin tins. Bake at 375 degrees F for about 20 minutes or until brown on top.
 

Variations:

With nuts - Add variation to grocery list

Ingredients:

Directions:

Add the nuts to the mixture after all the liquids and dry ingredients have been mixed together.

Carrot Muffins - Add variation to grocery list

Ingredients:

Replace:

With:

1 cupmashed pumpkin1 cupcooked mashed carrot
0.75 cupbrown sugar0.25 cupsugar

Add:

0.25 teaspoonnutmeg

Remove:

0.25 teaspoonallspice
0.25 teaspoonground cloves
0.25 teaspoonground ginger
