Ricotta Cheese Cake

Mix the graham crackers, sugar, and butter together and press into the bottom of the pan.
In a bowl, mix together the ricotta cheese, sugar, and flour until smooth and well blended. Stir in the eggs 1 at a time. Blend in the vanilla, cinnamon, orange zest, and pinch of salt. Pour the batter over the pan with the crumb base.
Bake in the oven at 300F for 1 hour and 15-30 minutes until slightly brown on top and a knife comes out clean. The cake rises at least double while baking.
Let the cake cool. As it cools, it will deflate. Garnish with raspberries to serve.
