Directions:

Step 1
In a small bowl, mix together the spices (salt, pepper, paprika, garlic powder, cumin, coriander, and chili powder)
Step 2
Trim the beef. If you buy a roast beef, cut it into two or three 1/2 - 1 inch thick slices. Coat the beef in the spice mix.
Step 3
In a slow cooker, place 1/4 cup of water. Place the coated beef pieces on the bottom of the slow cooker. Add the chopped onion, and any remaining spice mix around the beef. Cover each piece of beef with a thin layer of salsa, then place the remaining salsa around the beef in the slow cooker.
Step 4
If you prepare this the night before, you can leave the slow cooker in the fridge to marinate the beef in the salsa. Cook for 8-10 hours.
Step 5
Cook the rice in a pan or rice cooker.
Step 6
Shred the beef in the slow cooker with two forks. Add the cooked rice and optionally cooked beans, and mix everything together.
Step 7
Serve in taco shells or tortillas with your other favorite fillings.
