Spice CakeCategory: Adam_S > Desserts > Cakes A delightful little cake that is somewhat reminiscent of gingerbread. The tart yet sweet icing is a great addition. I prefer the cake after it has had a chance to cool in the fridge, although it's great at room temperature too. Directions:Step 1 Beat egg whites to stiff but moist peaks.
Step 2 Combine dry ingredients (1) in large bowl. Stir well to blend.
Step 3 Add butter, sugar, egg yolks, milk and vanilla (2) to (1). Beat with mixer on medium speed for 1 1/2 minutes until smooth.
Step 4 Fold in stiff egg whites.
Step 5 Spread butter in greased 9" square cake pan.
Step 6 Bake @ 375 degrees for 30-35 minutes, until a toothpick inserted into the centre of the cake comes out clean.
Step 7 Icing: Blend butter, half of icing sugar and lemon juice together until light. Gradually add remaining icing sugar and enough cream to make a smooth spreading consistency. Spread over cooled cake.
