Vanilla Buttercream Icing

This is a delicious icing that melts in your mouth. However, as the name implies, it's mostly butter.

1 poundbutter, softened
4 eggs
1 pinchsalt
1 cupsugar
2 teaspoonvanilla


Directions:

Step 1
In the bowl of a standing mixer, combine the eggs, sugar, vanilla, and salt. Place the bowl over a pan of simmering water and whisk continuously until the mixture has reached a temperature of 160 degrees F. This could take about 10 minutes.
Step 2
Beat the mixture on high speed until cool, about 5 min. On a medium speed, add the butter, one stick at a time. Increase the speed to high and beat until fairly solid. If you don't beat it long enough it will be difficult to ice the cake. Make sure you let the cake cool completely before icing, or it'll melt the icing.
 

Notes:

You may be able to get away with using less butter. Check the consistency after each stick of butter you add. We had just over half the butter and were ok with that. This is difficult to spread with a rubber spatula. It becomes more solid after sitting in the fridge for a couple hours.
