Amount
| 3 large | eggs |
| 1/4 cup | oil |
| 1 medium | onion |
| 1/4 teaspoon | pepper |
| 8 medium | potatoes |
| 1/2 teaspoon | salt |
Directions
- Chop the onion and peel the potatoes.
- Grate the potatoes. This can be done easily with a food processor.
- Place the grated potatoes in a bowl with cold water. Let them soak for about 5 min. (This is a good time to do some dishes). Strain the grated potatoes well, use a towel if necessary.
- Beat the eggs lightly with a fork.
- In a large bowl mix the onion, potatoes, eggs, salt and pepper.
- Heat some oil in a frying pan or griddle. Spoon out fairly thin 4-inch diameter potato latkes. Press them flat with a fork. Cook on each side for about 5-7 minutes until they turn golden brown. Add oil in between batches as necessary.
