2 carrots
0.5 teaspooncayenne pepper
1 14 oz. canchickpeas
1.5 teaspooncinnamon
1.5 tablespooncurry powder
3 clovesdiced garlic
1 eggplant
1 green pepper
6 tablespoonoil
1 onion
1.5 cuporange juice
2 tablespoonraisins
1 red pepper
0.5 teaspoonsalt
2 sweet potatoes
1.5 teaspoonturmeric
2 zucchini


Step 1
Chop up all the vegetables into somewhat large chunks. Put them in the frying pan with the oil and garlic and fry for 10-15 minutes.
Step 2
Add the orange juice, all the spices, and mix.
Step 3
Cook covered for 20-30 minutes until everything is cooked. Mix occasionally.


Serve on top of couscous. It goes well with lamb merguez sausage.
