Chop up all the vegetables into somewhat large chunks. Put them in the frying pan with the oil and garlic and fry for 10-15 minutes.
Add the orange juice, all the spices, and mix.
Cook covered for 20-30 minutes until everything is cooked. Mix occasionally.
Notes:Serve on top of couscous. It goes well with lamb merguez sausage.
