This recipe was originally for stuffed peppers, but the lazy just cut up the peppers and mix them in with the stuffing.Servings: 4

Cook beef in a frying pan until brown.
Chop the carrots, celery, zucchini and peppers and place in a large casserole dish.
Add the rice, water, tomato sauce, and beef to the casserole dish.
Mix the ingredients in the casserole dish. Then place in the oven at 350 degrees F. Bake covered for 1 to 1.5 hours mixing every once in a while. About 1 hour into baking, when the rice looks cooked, remove the cover and continue baking until all the liquid evaporates.
Serve with Parmesan cheese sprinkled on top.
