Potato LatkesCategory: Amy > Dinner > Side Dish These are some excellent traditional potato latkes. They are really simple to make, but frying them can take a while. Directions:Step 1 Chop the onion and peel the potatoes.
Step 2 Grate the potatoes. This can be done easily with a food processor.
Step 3 Place the grated potatoes in a bowl with cold water. Let them soak for about 5 min. (This is a good time to do some dishes). Strain the grated potatoes well, use a towel if necessary.
Step 4 Beat the eggs lightly with a fork.
Step 5 In a large bowl mix the onion, potatoes, eggs, salt and pepper.
Step 6 Heat some oil in a frying pan or griddle. Spoon out fairly thin 4-inch diameter potato latkes. Press them flat with a fork. Cook on each side for about 5-7 minutes until they turn golden brown. Add oil in between batches as necessary.
